Pumpkin Spiced Latte

I had an extremely busy week, so I was not able to try any new recipes. I had 3 exams and 1 scheduled for tonight. And after all that studying, I was in serious need of a caffeinated drink, not just some plain old coffee but something that would bring me back to the beautiful fall weather and remind me to take a break, smell the fresh fall air and look around at those beautiful fall colors surrounding me. But despite everything I didn’t want to leave the house to get a drink from my favorite coffee shop. I looked in my pantry and saw a can of pumpkin puree, so I decided to make pumpkin spiced latte at home with whatever I had on hand. And let me tell you, this beats anything store-bought and saved me from the hassle of getting out in the cold.

I topped it with some fresh whipped cream because I was in serous need of something delicious and full of fat. Don't judge me!! This served as a perfect pick me up, super delicious, creamy, full of pumpkin taste and cinnamon flavor, and made up for the crazy week I had!! Hope you enjoy it as much as I did!!
Serving: 1 tall mug
Preparation Time: 10 minutes
Ingredients
- 1 cup milk 
- 1 1/2 tablespoons pumpkin puree 
- 1 1/2 tablespoons sugar 
- 1 teaspoon vanilla 
- 1/4 cup +2 tablespoons freshly brewed coffee 
- 1 /8 teaspoon ground nutmeg 
- 1/8 teaspoon ground cloves 
- 1/4 teaspoon ground cinnamon, plus extra for sprinkling on top 
- 1 /8 teaspoon ground ginger, optional 
- Store bought or Homemade Caramel Sauce for drizzling on top, optional 
Whipped Cream
- 1/2 cup cold heavy whipping cream 
- 1/4 cup powdered sugar 
- 1 teaspoon vanilla extract 
Directions
- Add milk, pumpkin puree, and sugar to a saucepan over medium heat. 
- Bring to a boil whisking to get the pumpkin puree melt in the milk. 
- Remove the saucepan from the heat and whisk in the vanilla extract, hot brewed coffee, nutmeg, cloves, cinnamon and ginger. 
- Pour into a tall mug and top with whipped cream, sprinkle of ground cinnamon and drizzle of caramel sauce. Enjoy!! 
For Whipped Cream
- Beat heavy cream, powdered sugar and vanilla extract together with a mixer until stiff peaks form about 3-5 minutes. 
- Dollop on top of your latte or pipe with a pastry bag fitted with a star tip.
