Best Fluffy Stack of Pancakes



Hello guys!! I have been wanting to post this recipe for quite a while because no weekend breakfast is finished without a stack of hot, fluffy, homemade pancakes smothered in butter and syrup. And with holiday season just around the corner, I thought I should share my favorite recipe with you guys so you can make something special for your family. With Covid and lockdown in place, we can’t enjoy our favorite breakfast diner foods. And my family has really been craving some of our favorite foods. So, I decided to try making some pancakes at home. I must admit whenever I want to make pancakes, I find myself reaching for a boxed pancake mix for it’s ease of mixing. But this time I thought why not try making my own batter. And let me tell you, it was probably one of the easiest things I have made. I don’t know why I was always so daunted by making homemade pancake batter, although it is not that different from mixing a boxed mix. And these pancakes turned out so fluffy and delicious that now my family always wants homemade pancakes. What did I get myself into? Well let’s dive into the recipe!!



 

Servings: 12 pancakes

Preparation Time: 15-20 minutes


Ingredients

  • 2 cups all purpose flour

  • 4 tablespoons sugar

  • 3 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 1/2 teaspoon vanilla extract

  • 6 tablespoons butter, melted and slightly cooled

  • 2 eggs

  • 2 cups buttermilk


Directions

  1. Combine the flour, sugar, baking powder, baking soda and salt in a large-sized bowl and whisk.

  2. In a separate bowl add vanilla extract, melted butter, eggs and buttermilk.

  3. Use a wire whisk to whisk the wet ingredients together first until smooth.

  4. Add the wet ingredients in the dry ingredients and whisk well with a hand whish. No need to use an electric mixer.

  5. The batter will be thick and creamy in consistency.

  6. If you find the batter too thick and doesn't pour off a measuring cup smoothly add in a couple of tablespoons of extra buttermilk into the batter at a time until it reaches desired consistency.

  7. Set the batter aside and allow to rest while heating up your pan or griddle.

  8. Heat a griddle at 350 or a nonstick pan on medium heat and lightly grease with some butter.

  9. Pour 1/4 cup of batter in the pan and spread out gently into a round shape with the back of your measuring cup.

  10. When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.

  11. Serve warm with butter, maple syrup or honey!! Enjoy!!
