I don’t know how cold it is where you live but where we live it’s just so cold every day. Most days the only warmth I experience is when I am having my morning coffee. Today when deciding what to make for dinner, I peeked outside, and all I saw was snow flurries and strong fall wind blowing leaves everywhere. Just watching that made me want to have something warm and comforting for dinner. I thought about making a soup but then I was super tired and wanted to make something quick and easy for dinner, so I decided to make shrimps since they are super easy to make and get ready in just minutes.
While deciding how to season the shrimps, I just tossed them in whatever spices I could get my hands on in my spice cabinet which ended up being all the spices included in any Cajun seasoning and drizzled the shrimps with some fresh lime juice. I cooked the shrimps in some good olive oil, keeping it nice and simple. We ended up eating these with some ciabatta bread that I just grilled inside on a grill pan, rubbed with some fresh garlic while they were warm. And let me tell you, when you dip the crusty garlicky grilled bread in that delicious tangy and spicy sauce and top it with a juicy, spicy shrimp, it just makes for the most delicious and comforting one bite. Ingredients
1-pound Jumbo Shrimps, peeled and deveined, tail on
5 small garlic cloves, chopped
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
3/4 teaspoon oregano powder
1 teaspoon chili powder
1/4 teaspoon cumin powder
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes, or to taste
1/2 teaspoon salt.
2 tablespoons freshly squeezed lime juice
1 1/2 tablespoons olive oil
1 tablespoon butter, diced
1 tablespoon chopped fresh parsley, for garnish
Bread for serving
Directions
In a bowl, toss the shrimps, garlic cloves and all the spices along with the lime juice.
In a skillet on medium heat, add olive oil.
Add the shrimps and cook for 2-3 minutes on each side until shrimps are pink and cooked through.
Top with the diced butter and remove from the heat, letting the butter melt in the remaining heat of the pan. This creates a silky smooth sauce.
Top with chopped parsley.
Serve with your choice of bread. Enjoy!!
