Directions
Combine the flour, sugar, baking powder, baking soda and salt in a large-sized bowl and whisk.
In a separate bowl add vanilla extract, melted butter, eggs and buttermilk.
Use a wire whisk to whisk the wet ingredients together first until smooth.
Add the wet ingredients in the dry ingredients and whisk well with a hand whish. No need to use an electric mixer.
The batter will be thick and creamy in consistency.
If you find the batter too thick and doesn't pour off a measuring cup smoothly add in a couple of tablespoons of extra buttermilk into the batter at a time until it reaches desired consistency.
Set the batter aside and allow to rest while heating up your pan or griddle.
Heat a griddle at 350 or a nonstick pan on medium heat and lightly grease with some butter.
Pour 1/4 cup of batter in the pan and spread out gently into a round shape with the back of your measuring cup.
When the underside is golden and bubbles begin to appear on the surface, flip with a spatula and cook until golden. Repeat with remaining batter.
Serve warm with butter, maple syrup or honey!! Enjoy!!
